For my pork meal of the week, I grabbed some inspiration from this Greek Salad with Pork and made it my own. I had a sick kid and a baby in tow instead of the recipe, so I just ran around the store grabbing items that seemed Greek to me. I don’t know if the new recipe officially qualifies as Greek but I can confirm that it was quite tastey.
The original recipe called for cherry tomatoes, cucumber and onion, but I used sun-dried tomatoes, olives and feta cheese. Any meal with those three ingredients qualifies as a winner in my book! Seriously, I’m going to find a way to use sun-dried tomatoes in at least one recipe each week. Yum!
